Processing Method – Wet-Hulled (Giling Basah)
This traditional Indonesian processing method sets Sumatra Gayo coffee apart. After cherries are pulped, the parchment is partially dried before being hulled at a higher moisture content than other processing styles. This technique, unique to Sumatra, enhances the coffee’s heavy body and deep, complex flavors while imparting a signature herbal, earthy character.
